A bit of ice cream is spooned between pairs of chocolate sandwich cookies and frozen for fun-and-frosty treats.

What You Need

OREO Cookies, divided

Tbsp. vanilla ice cream, slightly softened

Make It

CHOP 2 of the cookies into small pieces; set aside. Spoon 1 Tbsp. of the ice cream onto each of 6 of the remaining cookies; top each with second cookie to make sandwich.

ROLL edges in chopped cookies. Place on waxed paper-covered baking sheet. Freeze 30 min. or until firm. Wrap individually in plastic wrap; store in freezer until ready to serve.

REMOVE from freezer 5 min. before serving. Let stand at room temperature to soften slightly.

Plain to make it for my Grandson's 3rd birthday in July but will probably try it before then. Sound really good.

YUM! I made this for my little brothers and sister for a "last day of school" treat. I also made these for my birthday treats. Oreos are yummy by themselves, and to add ice cream! SUPER! Good summer snack.

I love oreos, but this is too much cookie and ice cream is too messy to eat this way.. with too much whole cookie on either side of it. Sorry, I prefer less cookie, and more of a balance between the soft and the cookie outer.

I didn't know this was an actual recipe. I've made these ice cream cookie sandwiches before, but with a slight variation. I only like the oreo cookie and not the creme so I always scrape off the creme when eating Oreos. Whem making ice cream sandwiches, I scape off the creme, add mint chocolate chip ice cream, wrap and freeze. They are delicious...next time I will roll the sides in cookie crumbs like the recipe suggests.
