  • Mix mayo and garlic in pie plate; mix cracker crumbs and parsley in second pie plate.
  • Dip chicken in mayo mixture, then in crumb mixture, turning to evenly coat both sides of each breast with each ingredient.
  • Heat 2 Tbsp. oil in medium nonstick skillet. Add chicken, in batches; cook 4 min. or until done and evenly browned, turning after 2 min. and adding the remaining oil as needed.

Serving Suggestion

Serve with a steamed green vegetable, such as broccoli, and a cold glass of fat-free milk.

Substitute

Substitute pork loin cutlets for the chicken breasts.

Fish Milanese

Prepare as directed, substituting mild white fish fillets, such as catfish or tilapia, for the chicken breasts. Do not pound fish fillets to flatten. Also, reduce the cooking time to 3 min. on each side or until fish flakes easily with fork.

I did not have much in the house and this is the recipe that i found. I did have to sub whole wheat saltines for the ritz and oregano for the parsley. I have made it my way a few times b/c my husband and i liked it so much. sometimes my breading does not like to stay on but i think that has to do with my putting too much mayo on the chicken, so that is something to be careful about.

Rated 5 out of 5 by from my mom made this for us one night and it tasted blah b/c it had no salt. my mom made this for us one night and it tasted blah b/c it had no salt. the next time she made it she added some salt and pepper and OMG! i loooooooooooooove it! it's so yummy! she makes one a little extra crispy for me just the way i like it :)

Rated 5 out of 5 by from this was amazing! this was amazing! the mayo gave it a yummy tang to it. I added about 1/8 tsp of sea salt after reading some of the reviews here, plus used olive to fry in. quick and easy to make too.
