  • Preheat oven to 350ºF. Mix pork, stuffing mix, eggs, peppers and sour cream in large bowl until well blended.
  • Shape pork mixture into oval loaf in 13x9-inch baking dish; top with 1/2 cup of the salsa and bacon slices.
  • Bake 1 hour 15 min. or until cooked through (170ºF). Remove from oven; cover. Let stand 10 min. Serve with remaining 1/2 cup salsa, warmed.

Serving Suggestion

Serve this comfort food with mashed potatoes and steamed vegetables.

Special Extra

Spice it up! Add chopped chipotle peppers to meat mixture. Bake as directed.

Rated 5 out of 5 by from Great meatloaf! Great meatloaf! I've never had one with all pork before but it had so much flavor. The sour cream made it really moist. We didnt add the bacon because it didnt need it. Used a whole jar of cherry salsa to top it. Will make this again.
