I made it and liked it! I read the recipe and added vanilla and cinnamon, prior to reading the reviews, simply because we like those flavors. The apricots were a nice twist. I also made an orange ***** cheese to spread on each slice. My husband took it to work for breakfast every morning to have with coffee. Will make it again.
I tried this and mine came out sort of uncooked in the middle. It took a really long time for it to set. It always seemed like it was not done. I gave up after about 70 mins and even then it was mush in the middle. It does not taste like the zucchini bread I am used to at all. Not happy with this recipe :-( Sorry!
I made this recipe when it came out in the magazine and it was AWFUL._It deserves NO stars. P.S. I am a regular maker/baker of zucchini, banana, pumpkin breads so it was not that a novice could not make this recipe.
