  • Heat oven to 350ºF.
  • Spread zucchini onto clean kitchen towel; roll up towel, then wring over sink to remove as much liquid as possible. Set aside. Combine flour, baking powder and baking soda.
  • Beat cream cheese, mayo and sugar in large bowl with mixer until blended. Add egg; mix well. Gradually add flour mixture, mixing well after each addition. Stir in zucchini, apricots and nut mix.
  • Pour into 8x4-inch loaf pan sprayed with cooking spray.
  • Bake 40 to 45 min. or until toothpick inserted in center comes out clean. Cool 5 min. Remove from pan to wire rack; cool completely.

Substitute

Substitute golden raisins for the chopped apricots.

Substitute

Rated 1 out of 5 by from If I could give it no stars I would. If I could give it no stars I would. This was horrible. Wasted a zucchini and it didn't bake. Came out raw, even after the allotted time listed and kept adding more time. Will not be wasting anymore zucchini on this bread.

I am a regular maker/baker of zucchini, banana, pumpkin breads so it was not that a novice could not make this recipe.

Rated 3 out of 5 by from I made it and liked it! I made it and liked it! I read the recipe and added vanilla and cinnamon, prior to reading the reviews, simply because we like those flavors. The apricots were a nice twist. I also made an orange ***** cheese to spread on each slice. My husband took it to work for breakfast every morning to have with coffee. Will make it again.

Rated 2 out of 5 by from Just ok Thought this recipe would be really good but turned out just ok. Needed some flavor enhancement. I think a teaspoon of cinnamon and dash of nutmeg would really help. Very moist just lacked flavor.

Rated 1 out of 5 by from I tried this and mine came out sort of uncooked in the middle. I tried this and mine came out sort of uncooked in the middle. It took a really long time for it to set. It always seemed like it was not done. I gave up after about 70 mins and even then it was mush in the middle. It does not taste like the zucchini bread I am used to at all. Not happy with this recipe :-( Sorry!

But the bread, while colorful, was pretty tasteless! It needed cinnamon/sugar, or something for more taste! And it was a lot of fooling around to make besides! Will not make again!

Rated 1 out of 5 by from Not Good! Had to throw out! It came out very light colored and had little flavor even though I added 1 teaspoon of cinnamon. I have made many quick breads and this was just a disaster! A waste of time and money. So disappointed!
