  • Heat oven to 350ºF.
  • Spread zucchini onto clean kitchen towel; roll up towel, then wring over sink to remove as much liquid as possible. Set aside. Mix flour, baking powder and baking soda until blended.
  • Beat cream cheese, mayo and sugar in large bowl with mixer until blended. Add egg; mix well. Gradually add flour mixture, mixing well after each addition. Stir in zucchini, apricots and nuts.
  • Pour into 8x4-inch loaf pan sprayed with cooking spray.
  • Bake 40 to 45 min. or until toothpick inserted in center comes out clean. Cool 5 min. Remove from pan to wire rack; cool completely.

Substitute

Substitute golden raisins for the chopped apricots.

    If I could give it no stars I would. This was horrible. Wasted a zucchini and it didn't bake. Came out raw, even after the allotted time listed and kept adding more time. Will not be wasting anymore zucchini on this bread.

    made it for a luncheon. came out good. it should be chilled before cutting & serving. I thought it had good flavor & so did others. I guess it's individual taste.

    I made this for my husband and myself, and we both like zucchini. But the bread, while colorful, was pretty tasteless! It needed cinnamon/sugar, or something for more taste! And it was a lot of fooling around to make besides! Will not make again!
