Substitute 2 cups cholesterol-free egg product for the beaten eggs.
Crumble all of the bacon, stirring it all into the egg mixture before pouring into baking dish. Increase the initial bake time to 25 to 30 min. or until knife inserted in center comes out clean.
Serve topped with TACO BELL® Thick & Chunky Salsa.

I substituted turkey bacon, used half as much becuase half burned. I didn't put the half slices on top. I added salt and pepper to compensate for the missing bacon and used red and green pepper. This was amazing. I love regular bacon but my BIL doesn't eat pork hence the substitution. I am making it again today with turkey bacon because I liked it so much. Also, this was for a family brunch and I doubled the recipe and used a 13x9 dish and it was perfect.
