What You Need

bag  (16 oz.) coleslaw blend (cabbage slaw mix)
cup  KRAFT Lite Zesty Italian Dressing
pkt.  SHAKE 'N BAKE Chicken Coating Mix
tsp.  poultry seasoning
tsp.  ground red pepper (cayenne)
small  boneless skinless chicken breasts (2 lb.)
cup  buttermilk
cups  hot mashed sweet potatoes

Make It

PREHEAT oven to 400°F. Empty coleslaw blend into medium bowl. Add dressing; toss to coat. Cover. Refrigerate until ready to serve. Place coating mix, poultry seasoning and pepper in shaker bag. Close bag; shake gently to mix.

MOISTEN chicken with buttermilk, turning to evenly coat both sides of each chicken breast. Gently shake off excess buttermilk. Add 1 or 2 pieces of chicken to shaker bag; shake until evenly coated. Place in single layer in foil-lined 15x10x1-inch baking pan. Discard bag and any remaining coating mix.

BAKE 20 min. or until chicken is cooked through (170°F). Serve with the coleslaw and sweet potatoes.

Kraft Kitchens Tips

Prepare as directed, using SHAKE 'N BAKE Hot & Spicy Seasoned Coating Mix for Chicken or Pork and omitting the ground red pepper.
Special Extra
Stir 2 tsp. hot pepper sauce into buttermilk before using to coat the chicken.
How to Safely Thaw Chicken
The best way to thaw frozen chicken is in the refrigerator. Never thaw chicken or other meats at room temperature on the countertop since this provides an ideal temperature for bacterial growth. When thawing chicken in the refrigerator, place on a plate on the bottom shelf to prevent any raw juices from dripping onto other foods or refrigerator surfaces. For quicker thawing, place chicken in a water-tight plastic bag and submerge in cold water. Let stand until thawed, changing the water every 30 min. A microwave oven can also be used to thaw cut-up chicken pieces. Use caution when thawing chicken in the microwave, making sure there is plenty of air circulation around the chicken in the oven. Thawing a frozen whole chicken in the microwave is not recommended since it may not thaw evenly. Chicken thawed in the microwaved must be cooked immediately to prevent bacterial growth.
