  • Heat oven to 400°F.
  • Combine first 4 ingredients in large shallow baking dish; set aside. Mix 1/4 cup cheese and coating mix in separate shallow dish. Add chicken; turn to evenly coat both sides of each piece. Place over zucchini mixture.
  • Bake 45 min. or until chicken is done (165°F). Meanwhile, cook pasta as directed.
  • Drain pasta. Serve topped with chicken, zucchini mixture and remaining cheese.

Substitute

Prepare using skinless chicken pieces. Look for them in the packaged meat section of most larger supermarkets.

Modifications: I added minced garlic (because I always cook with it), onions, and red pepper flakes to the veggie mixture. I also doubled the tomatoes. Couldn't find the Italian flavored Shake'N Bake so I used chicken flavor and added extra parmesean and Italian seasoning. Was very happy with the pasta & veggies, but the chicken was just okay. Maybe next time I'll try boneless breasts. Got great reviews from the family so I will make again.

I add an extra can of diced tomatoes (extra juice helps food not stick to the pan). I also use individually frozen chicken breasts instead of the whole chicken pieces...they're easy to thaw out when i need. Enjoy!

Rated 5 out of 5 by from AWESOME! AWESOME! I made this and my whole family loved it. I used whole chicken breast and mixed black olives with calamata olives. Added a little extra zest. Liked the other reviewers idea of adding an extra can of tomatoes. Will definitely make this many more times.

Rated 5 out of 5 by from Loved this recipe. Loved this recipe. I did double the tomatoes and dripped olive oil over the zucchini mixture prior to the chicken - this recipe was nowhere near dry, after reading others comments I was a little worried about dryness - but it was a hit at my house

Rated 2 out of 5 by from JUST, NOT GOOD. JUST, NOT GOOD. IT NEEDS GARLIC, RED PEPPER,ITALIAN SEASONING, AND MORE LIQUID. THE ZUCCHINI WAS CRUNCHY AND DRY. MAYBE A CAN OF TOMATO SAUCE WOULD HELP.THE CHICKEN ON THE OTHER HAND CAME OUT PERFECT.
