  • Heat oven to 400°F.
  • Combine first 4 ingredients in large shallow baking dish; set aside. Mix 1/4 cup cheese and coating mix in separate shallow dish. Add chicken; turn to evenly coat both sides of each piece. Place over zucchini mixture.
  • Bake 45 min. or until chicken is done (165°F). Meanwhile, cook pasta as directed.
  • Drain pasta. Serve topped with chicken, zucchini mixture and remaining cheese.


Prepare using skinless chicken pieces. Look for them in the packaged meat section of most larger supermarkets.


Prepare using fusilli pasta.

    Loved this recipe. I did double the tomatoes and dripped olive oil over the zucchini mixture prior to the chicken - this recipe was nowhere near dry, after reading others comments I was a little worried about dryness - but it was a hit at my house

    Modifications: I added minced garlic (because I always cook with it), onions, and red pepper flakes to the veggie mixture. I also doubled the tomatoes. Couldn't find the Italian flavored Shake'N Bake so I used chicken flavor and added extra parmesean and Italian seasoning. Was very happy with the pasta & veggies, but the chicken was just okay. Maybe next time I'll try boneless breasts. Got great reviews from the family so I will make again.

    Too watery and very bland. The chicken was just okay. Not a keeper for us.
