  • Cook bacon in nonstick skillet until crisp; remove from skillet, reserving 1 tsp. drippings in skillet. Drain bacon on paper towels.
  • Add egg to reserved drippings; cook 2 min. or until whites are completely set and yolks are cooked to desired doneness, turning after 1 min. Sprinkle with pepper.
  • Spread 1 toast slice with mayo; sprinkle with basil. Top with tomatoes, bacon, egg and second toast slice.

Special Equipment Needed


Cook bacon in microwave as directed on package. Cook egg in 1 tsp. heated olive oil instead of in the reserved bacon drippings. Continue as directed.

How to Slice Large-Leafed Fresh Herbs

Slice large-leafed herbs such as basil and mint, into thin strips by stacking several leaves on top of one another. Roll the stack lengthwise into a cylinder. Using a sharp knife, cut the cylinder crosswise to form fine shreds. This cut is called chiffonade. Be sure to use a sharp knife - a dull knife will bruise the leaves while cutting.
