  • Heat oven to 350°F.
  • Prepare crust in 9-inch pie plate as directed on package for one crust filled pie.
  • Beat cream cheese, 1/4 cup sugar and vanilla with mixer until blended. Add 1 egg; mix well. Pour into crust.
  • Mix pumpkin, milk, spices, remaining sugar and eggs in separate bowl until blended; pour slowly over cream cheese layer in crust.
  • Bake 1 hour 5 min. or until center is set. Cool completely.

Cover edge of pie crust with strip of foil for the last 15 min. of the baking time to prevent it from browning too much.

How to Soften Cream Cheese

Place completely unwrapped package of cream cheese in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened. Add 15 sec. for each additional package of cream cheese.

Substitute

Prepare using PHILADELPHIA Neufchatel Cheese.

Rated 5 out of 5 by from I have been making this recipes for YEARS ... I have been making this recipes for YEARS ... here's the trick. Bake it like a cheesecake. Use a graham cracker crust and a springform pan. Much better than the pie crust method. I have also made this in ramekins or small Pyrex dishes for individual custards. Also excellent. .

I was embarrased by it b/c a day after I made it a lady from church gave me a homemade pumpkin pie and hers was better and my husband liked hers and ate hers. It was a bad recipe, which is not my fault. It was bland, needed more cinnamon and just didn't have great consistency.

The pie was so simple to make, yet, had the appearance of a pie that took hours. The cream cheese bottom is that little element of surprise when you cut into it. I would definitely make this pie again. Thanks for the recipe!

My faimly does not like Pumpkin piie.Yet there was no stopping them from eating this all.My 2 year old son snuck in from the fridge...Needless to say he ate half the pie. Rated 4 out of 5 by from This pie is quite delicious. This pie is quite delicious. I would also suggest purchasing a deep-dish pie crust, as the pumpkin tends to be too much for a shallow crust. It's great as an easy desert!
