Parmesan-Crusted Chicken Cordon Bleu

Sure, there's a bit of pounding and dipping to be done, but one bite of this Parmesan-Crusted Chicken Cordon Bleu will convince you it's worth it!

What You Need

small  boneless skinless chicken breasts (1 lb.)
tsp.  GREY POUPON Savory Honey Mustard
slices  OSCAR MAYER Honey Ham
 KRAFT Big Slice Swiss Cheese Slices
cup  seasoned dry bread crumbs
cup  KRAFT Grated Parmesan Cheese
 egg, lightly beaten

Make It

HEAT oven to 350°F.

POUND each chicken breast to flatten slightly. Spread each breast with 1 tsp. mustard; top with 1 ham slice and 1 cheese slice. Roll up to enclose filling; secure with toothpicks.

MIX bread crumbs and Parmesan. Dip chicken in egg, then into crumb mixture, turning to evenly coat all sides. Place in shallow baking dish sprayed with cooking spray.

BAKE 25 min. Cover loosely with foil; bake 15 to 20 min. or until chicken is done (165ºF). Remove toothpicks before serving.

Serve with a mixed green salad and your favorite fresh fruit to round out the meal.
Special Extra
Garnish with chopped fresh parsley.
Substitute ATHENOS Crumbled Blue Cheese for the Swiss cheese. Prepare as directed, spooning 1 Tbsp. blue cheese over ham on each chicken breast before rolling up.
