  • Heat oven to 375ºF.
  • Cut each squash piece in half; place, cut sides up, in 13x9-inch baking dish. Add water to dish; cover.
  • Bake 40 min. or until squash is tender.
  • Mix butter, sugar and oil; spoon over squash. Top with cheese and cinnamon; bake, uncovered, 5 min.

How to Make the Squash Easier to Cut in Half

To more easily cut the squash in half, pierce whole squash in several places with sharp knife; place on microwaveable plate. Microwave on HIGH 2 min.; cool 2 min. Cut in half, then continue as directed.

Substitute

Substitute ground nutmeg for the cinnamon.

Rated 1 out of 5 by from This sounded so good but after making it, no one in my family would eat it. This sounded so good but after making it, no one in my family would eat it. Baking time should have probably been much longer as the squash was still very hard. The "glaze" was a pool of warm liquid settled in the hollow. Very disappointed.

I was a bit nervous that the parmesan would overpower the sweetness of the cinnimon or brown sugar, but it didn't at all! The flavors were great together and it made this a wonderful side dish.
