How to Blanch Fresh Snow Peas
To blanch the snow peas, add them to a pot of boiling water; cook, uncovered, 2 to 3 min. Drain, then immediately plunge the snow peas into a bowl of ice water to stop the cooking process. When completely cool, drain the snow peas and pat them dry.

Storing & Preparing Fresh Pea Pods
Store fresh pea pods, unwashed, in a perforated plastic bag in the refrigerator for up to 3 days. Rinse with cold water just before using, then snap off the stem end of each pod and pull down along the edge of the pod to remove any strings. Cook as desired.
