  • Cook and stir sausage and onions in large skillet on medium-high heat 15 min. or until sausage is cooked through and onions are tender. Meanwhile, cook pasta as directed on package.
  • Add arugula and broth to sausage mixture; cook 5 min. or until arugula is wilted and tender, stirring occasionally.
  • Drain pasta; place in large bowl. Add sausage mixture and cheese; mix lightly.

Note

Two bunches of arugula will yield about 4 cups packed leaves.

Special Extra

For a moister dish, reserve 1/4 cup of the water used to cook the pasta. Add to pasta along with the sausage mixture and feta cheese.

    I USED GEMELI PASTA, I DID NOT HAVE CHICKEN BROTH OR STOCK ON HAND BUT I DID I HAVE ONE CAN OF CREAM OF CHICKEN, SO IT WENT PRETTY WELL WITH THE DISH. IT WAS VERY CREAMY AND FLAVORFUL, THE HOT ITALIAN SAUSAGE GAVE IT A LITTLE KICK AND THE THE ARUGULA, EXCELLENT. VERY GOOD.

    I put spinach in it and it was great! Love it!

    This was really good. I didn't have arugula so I used frozen spinach. Great flavor, esp because of the feta cheese.
