  • Blend 1/2 cup dressing, cilantro, nuts, pepper and garlic in blender until smooth.
  • Cook pasta as directed on package. Meanwhile, heat remaining dressing in large nonstick skillet on medium heat. Add carrots, asparagus and onions; cook 8 min. or until crisp-tender, stirring frequently.
  • Drain pasta; place in large bowl. Stir in mozzarella, dressing mixture and vegetable mixture. Sprinkle with Parmesan.

Variation

Prepare using your favorite pasta and/or substituting trimmed fresh green beans for the asparagus.

Variation

For a milder taste, this pesto-style sauce can also be made by substituting 1 large bunch Italian parsley for the cilantro.

    Tasty and easy to make, a little spicier than I anticipated but it could be because I didn't seed the jalapeno before blending it. I added mushrooms because everyone in my family loves them.
