  • Stir boiling water into gelatin mixes in large bowl 2 min. until completely dissolved. Add enough ice to cold water to measure 2 cups. Add to gelatin; stir until ice is completely melted. Refrigerate 20 min. or until gelatin is slightly thickened.
  • Meanwhile, line bottom of 13x9-inch baking dish with cake slices. Add 1 cup of the strawberries and 1 cup of the blueberries to thickened gelatin; stir gently. Spoon over cake slices. Refrigerate 4 hours or until firm.
  • Whisk Neufchatel and sugar in large bowl until blended; stir in 2-1/2 cups COOL WHIP. Spread over gelatin. Arrange remaining strawberries and remaining 1/2 cup blueberries on Neufchatel mixture to resemble the squares of a quilt. Pipe remaining whipped topping around squares.

Substitute

Prepare as directed, using JELL-O Berry Blue Flavor Gelatin.

How to Pipe COOL WHIP Whipped Topping

Spoon whipped topping into resealable plastic bag. Cut small piece off one of the bottom corners of bag; seal bag. Gently squeeze top of bag to pipe whipped topping onto dessert as directed.

I baked a boxed white cake in a disposable foil can rather than use the pound cake (much cheaper, too) and I decorated it like a flag like the "Wave your Flag" cake, instead of the quilt look. I would add a bit more sugar to the cheese and whipped topping frosting next time - it's very similar to the fruit dip I've had on fruit trays. The entire cake was gone and I received many compliments and gratitude. I also used a combo of wild strawberry & rasberry jello. Not too sweet and can easily be modified for diabetics using the appropriate sweetener.

It worked out great! Next time, I'll have to watch the jello a little closer. At 20 minutes, the gelatin had set a little too far, when I added the fruit. I'll also be a little more conservative, saving more topping for the piping; I ran out. Everyone loved this recipe!

I make this almost every summer for our annual Summerfest party, which is usually around the 4th of July. Do some prep ahead of time then decorate the day you want to serve. I found it easiest to pipe, then put in the fruit, to answer another reviewer's question. With the fresh fruit and it being chilled, this is refreshing for a summer dessert.

This dessert really stands out at any party and all your guestswill love the fruity flavors. Plus you can make it in advance, so it is easy to take along to any picnic or celebration.

I did the pound cake and Jello layer the night before, and added the cream cheese and Cool Whip layer before the cookout.
