  • Preheat oven to 350°F. Chop 16 of the cookies; set aside. Place remaining 16 cookies in food processor container; cover. Process 30 to 45 seconds or until finely ground. Add butter; mix well. Press firmly onto bottom of 13x9-inch baking pan.
  • Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Gently stir in 1-1/2 cups of the chopped cookies. Pour over crust. Sprinkle with remaining chopped cookies.
  • Bake 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Cut into 32 bars. Store in tightly covered container in refrigerator.

Substitute

Prepare as directed, using PHILADELPHIA Neufchatel Cheese.

How to Easily Remove Bars From Pan

Line pan with foil before pressing crumb mixture onto bottom of pan, extending ends of foil beyond sides of pan. Use foil as handles to easily remove cooled dessert from pan.

Special Extra

For easy cleanup, line baking pan with foil using this easy method.  Turn pan upside down and fit a piece of foil over top of pan, smoothing corners as needed.  Remove foil.  When you turn the pan over, the foil fits perfectly inside the pan.

Rated 3 out of 5 by from i made this recipe last weekend, i found it odd it only asked for half of an 8 oz package of cream... i made this recipe last weekend, i found it odd it only asked for half of an 8 oz package of cream cheese, but it was still good i put a little bit more cookie in there cuz i love pb, next time i will put a whole bar of cream cheese in there and see how it goes, i used the light cream cheese for this recipe. i would make it again with diferent flavors or do different things with this flavor. thanks for the recipe!

Since I am in to making all kinds of flavored cheesecakes I thought this one was a little to dry for me. Myself I would omit using all what is called for on the nutterbutter cookies for the inside of the cheesescake. My friends thought it was wonderful. I will make it again for sure using less cookies.

They all loved it and requested the recipe. These are so delicious and pretty easy to make.
