  • Cook pasta in large saucepan as directed on package, adding vegetables to the boiling water the last 3 min. Meanwhile, blend lime juice, soy sauce, honey and 1/4 cup nuts in blender until smooth.
  • Drain pasta mixture; place in large bowl. Add all but 1/4 cup of the peanut sauce; mix lightly.
  • Refrigerate 1 hour. Add remaining peanut sauce and nuts; mix lightly.

Special Extra

Garnish with chopped fresh cilantro.

Rated 5 out of 5 by from this recipe was very yummy and peanuty. this recipe was very yummy and peanuty. it was good because I like thai food. i made it using mixed nuts instead of the peanuts and it still tasted really good. i would definitely make it again. the only thing that took a long time was cutting up the carrots into matchsticks. that took forever but it was worth the wait.

I prepared this in just a few minutes late on a Saturday evening to take into work the next day. It was so simple. Everyone at work loved it and requested the recipe. It is very hearty. Next time I will add some leftover chicken to make a complete meal.

I was very pleased at how well this turned out - had been a bit skeptical of the dressing. I added some chopped cooked chicken to make it a dinner meal and it was quite filling. We will definitely make this again.

Rated 2 out of 5 by from Too bland. Too bland. Used blender and had a mess. Would change to peanut butter whipped in a bowl with other sauce juices. Texture of the chopped peanuts is not nice but it tasted okay and was healthy.
