  • Heat dressing in large nonstick skillet on medium-high heat. Add vegetables; stir-fry 3 min. Add chicken; stir-fry 5 min. or until done.
  • Add nuts and soy sauce; stir-fry 2 min. or until vegetables are crisp-tender and mixture is heated through.
  • Serve over salad greens.

Peanut-Chicken Wraps

Omit salad greens. Cook chicken mixture as directed; spoon down centers of 4 warmed (10-inch) fat-free flour tortillas. Roll up and serve.

Other alterations were a little more chicken, a little more dressing and I added red pepper flakes to the soy sauce before mixing it in to give it some kick. I used sweet onion, red bell pepper, broccoli and zuchini. My husband and I thought it was great and I found it easy to prep and easy to cook. I would add the broccoli with the chicken instead of with the other veggies since it was overcooked at 9 minutes. Definitely one we will repeat frequently! It tasted as good as Chinese takeout but without the grease!

Was a quick recipe served over coarsely chopped lettuce, but would be great served as a wrap using whole lettuce leaves. The recipe itself was a bit bland but the crunch of the vegetables was great. I might use Hoisin sauce in place of the soy sauce. Didn't have any peanuts but substituted chopped almonds which, blended very well. Definitely will make this one again. I love lettuce wraps, but tortillas would work too.

Rated 5 out of 5 by from My family loved it! My family loved it!. OK! I admit it. My family rarely gets their "suggested" daily veggies. They simply don't like them (that goes for me too). So, I started looking for recipes that were totally out of our norm. This one was so good my 15 year old went back for seconds! I did use a little more dressing than suggested because of another review. This one is definitely a re-do!

Rated 5 out of 5 by from This was so good. This was so good. I omitted the peanuts and used 1/3 cup Kraft Free Catalina dressing and a little more than 2 Tbsp. soy sauce. I also added more veggies than it called for and I served it over organic mixed baby greens. I also should have doubled the recipe b/c we were left wanting more! What a delicious meal!

SO QUICK AND EASY ! I prefer to cook my chicken, first - add the veggies, then the dressing...once I have the veggies near the firmness, I like - I add the soy sauce. I eat this over rice. YUM !!!!!!!!!!!!!!!!

I added my favorite vegetables and added a little extra liguid and then added brown rice and used wheat wraps. Great alternative for a sandwich for your lunch and very filling. I give it an A++++.

They all seem to enjoy and it passes my test since it is healthy. I always cook the chicken completely first and then do everything else. Also I usually serve it with rice.

Rated 4 out of 5 by from Great! Great! Makes a perfect lunch; it's quick to fix and you don't feel stuffed -- just satisfied. I used red bell peppers, broccoli, small carrot sticks, and onion. Tasty combination, especially with the final addition of the nuts!
