  • Heat oven to 350ºF.
  • Cut pears lengthwise in half; remove cores, then cut pears lengthwise into 1/4-inch-thick slices. Arrange on bottom of 13x9-inch pan sprayed with cooking spray. Combine sugar and spice; sprinkle over pears. Top with cranberries.
  • Beat next 5 ingredients with mixer until blended; pour over ingredients in pan.
  • Bake 35 min. or until toothpick inserted in center comes out clean and cake begins to pull away from sides of pan. Cool 10 min. Run knife around edges of pan to loosen cake. Place large platter over cake; invert cake onto platter. Gently remove pan. Cool cake slightly. Serve topped with COOL WHIP.

Special Extra

Stir additional 1/4 tsp. pumpkin pie spice into COOL WHIP before serving over cake.

Note

If you don't have a large platter, invert cake onto baking sheet instead.

Rated 5 out of 5 by from This is a winner! This is a winner! I made it for dinner guests and they LOVED it. I sent half the cake home with them and they are still talking about it! In my oven it required 50 minutes of baking (I used a metal 9/13 pan). I will definitely be making this again - a delightful change from the expected pineapple!

Rated 5 out of 5 by from This was so easy to make and absolutely delicious! This was so easy to make and absolutely delicious! The pudding box I used was 5.4 oz istead of the 3.4 oz it called for. But I used the whole thing anyway and it still came out amazing! The cake is super moist, even after five days in the fridge.

I loved this, my family ate it but reviews were mixed--heard pears didn't have a "strong" flavor and it was kind of bland without ice cream or generous whipped topping(like the pineapple they're used to in this cake), might try apples next time.

Rated 5 out of 5 by from Loved it! Loved it!! Took it to work & my co-workers raved about it. I used 1/2 tsp cinnamon, 1/4 tsp ground cloves & 1/4 tsp nutmeg in place of the pie spice. Will definetly make again. Makes many servings too.
