Pear Upside-Down Cake

Move over, pineapple—pears are having a moment. This pound cake-like confection featuring pumpkin spice and cranberries is poised to steal the spotlight.

What You Need

fresh pears (1 lb.), peeled

3/4

cup packed brown sugar

tsp. pumpkin pie spice

1/2

cup dried cranberries

pkg. (2-layer size) yellow cake mix

pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding

eggs

1-1/4

cups water

1/4

cup oil

cups thawed COOL WHIP Whipped Topping

Make It

HEAT oven to 350ºF.

CUT pears lengthwise in half; remove cores, then cut pears lengthwise into 1/4-inch-thick slices. Arrange on bottom of 13x9-inch pan sprayed with cooking spray. Mix sugar and spice; sprinkle over pears. Top with cranberries.

BEAT next 5 ingredients with mixer until blended; pour over ingredients in pan.

BAKE 35 min. or until toothpick inserted in center comes out clean and cake begins to pull away from sides of pan. Cool 10 min. Run knife around edges of pan to loosen cake. Place large platter over cake; invert cake onto platter. Gently remove pan. Cool cake slightly. Serve topped with COOL WHIP.

Special Extra

Stir additional 1/4 tsp. pumpkin pie spice into COOL WHIP before serving over cake.

Note

If you don't have a large platter, invert cake onto baking sheet instead.

Cake can be made ahead of time. Serve at room temperature. Refrigerate leftovers.

I loved this, my family ate it but reviews were mixed--heard pears didn't have a "strong" flavor and it was kind of bland without ice cream or generous whipped topping(like the pineapple they're used to in this cake), might try apples next time.

Loved the flavors. Very warming and full of Fall feeling. However my pears turned quite dark in color, as did the cake. Not nearly so pretty as the picture ;-(
