cups PLANTERS Pecan Halves, divided

3/4

cup (1-1/2 sticks) margarine or butter, softened

1/3

cup firmly packed brown sugar

1-1/4

cups flour

tsp. vanilla

1/4

tsp. salt

Make It

PREHEAT oven to 350°F. Reserve 36 of the pecan halves for garnish; finely chop remaining pecans.

BEAT margarine and sugar in large bowl with electric mixer on medium speed until light and fluffy. Blend in flour, chopped pecans, vanilla and salt. Shape dough into 36 balls, each about 1 inch in diameter. Place, 2 inches apart, on baking sheets; flatten with floured glass. Press 1 pecan half into center of each cookie.

BAKE 10 to 12 minutes or until edges are golden. Remove from baking sheets; cool completely on wire racks. Store in airtight container at room temperature.

I think mine might have been a little flat/crisp since I accidently melted the butter instead of just softening it...but they still tasted great!

Very good tasting cookie, similar to Pecan Sandies but its just a flatter cookie.

Not sweet enough for me. I doused them with powdered sugar, then they were ok. They crumble very easily, so don't try to stack them. They would be better off to stay as "Butterballs".

The finished product is attractive and tastes delicious; the cookie is delicate and breaks easily but if proper care is taken in storage, this shouldn't be a problem. This is a good recipe to double, if you can get enough whole pecans to place on top of the cookie. I had a little trouble with flattening the cookie using a floured glass; next time I'm going to try powdered sugar instead of flour. Definitely worth making though. The dough was very easy to make, took only a few minutes, and baking time wasn't long at all. Temperature and times were accurate.

My parent's both love pecans and I couldn't find any recipes for the longest time that seemed like they might like them. I made a batch of these and within the day the entire batch dissapeared. I baked mine for nearly twice the recommended time to give them a slightly crisper texture. My mom said the texture was perfect.

Tried these - they are delicious. Will definitely put them on my Christmas cookie tray but I will double the recipe. I'm sure they will go fast!
