  • Heat oven to 350ºF.
  • Combine flour and cornstarch. Beat butter and 1 cup sugar in large bowl with mixer until light and fluffy. Gradually add flour mixture, mixing well after each addition. Add nuts; mix just until blended.
  • Roll dough into 1-inch balls; place, 2 inches apart, on baking sheets. Flatten slightly with bottom of glass.
  • Bake 13 min. or until centers are set and tops are lightly browned; cool on baking sheets 5 min. Add warm cookies, 1 at a time, to remaining sugar; turn to evenly coat both sides of each. Cool completely on wire racks.

Easy Cleanup

Line the baking sheets with parchment before use. The baked cookies will slide right off and you won't have to wash the pans in between uses.

Place cookie dough on parchment-covered baking sheets to prevent cookies from sticking to pans and to help keep baking sheets clean between batches.

Bittersweet Shortbread Cookies

Prepare as directed, reducing the nuts to 1 cup and adding 1-1/2 pkg. (4 oz. each) BAKER'S Bittersweet Chocolate, coarsely chopped, to prepared dough along with the nuts.

We changed the name to Georgia snowball cookies since that's where I'm from & the dusting of sugar is the amount of snow we MIGHT get in a year. This is totally kid friendly from the dumping ingredients, older kids helped use the mixer, using a mini ice cream scoop for making the balls, etc. The most fun was hiding the cookies in the sugar & finding them! I got over 7 dozen using a 1" scoop. I put extra cookies in the freezer to see how they hold up. Definitely a new tradition in our house!! Thanks!!

I've used this recipe 4 times during the holidays because it was easy to follow, took very little time to prepare, and they taste great. Once I got the hang of it, I changed the bittersweet to semi-sweet chocolate, and added a little vanilla flavoring, that seems to work better for me. It's become one of my favorites.

After you bake the cookies and they are still warm you are suppose to sift some powdered sugar and completely cover the cookies in the sugar. No wonder most people that rated this cookie said they were plain and bland!

Rated 5 out of 5 by from Amazing! Amazing! I did lots of baking for xmas and these cookies are still moist 2 weeks later. My mom used to make these and they were so dry but everyone loved these cookies! Be careful not to overcook and I made my dough the night before.
