This was a hit at the picnic I went to. I did change a couple things, since we are kinda wimpy with the spicy food. I used 1/2 pepper jack and 1/2 mozzarella cheese, and cut back to 1/2 tbsp on the chili powder. The mozzarella made the quesadilla a little cheesier, and there was just enough of a bite with the pepper jack cheese. Best of all, it was a different appetizer - but was very quick and easy to make!
