  • Microwave chocolate, cream and butter in microwaveable bowl on HIGH 1 to 1-1/2 min. or until butter is melted, stirring after 1 min. Stir until chocolate is completely melted. Blend in extract.
  • Refrigerate 3 hours or until firm.
  • Shape 1 tsp. chocolate mixture into 1/2-inch ball; place between 2 wafers to form sandwich. Press together gently. Roll edge in crushed mints; place on waxed paper-covered baking sheet. Repeat to make 20 cookie sandwiches.

How to Easily Crush Candies

Crushing hard candies, such as starlight mints, can be a messy task. To keep candy pieces contained, place mints in resealable plastic bag; seal bag. Use rolling pin or meat mallet to crush the candy into small pieces.

Make Ahead

Peppermint filling can be made ahead of time. Prepare and shape into balls as directed; place on waxed paper-covered baking sheet. Cover tightly; refrigerate up to 1 week. When ready to assemble sandwiches, remove from refrigerator; let stand at room temperature 15 min. to soften slightly. Place between wafers and roll in crushed mints as directed.
