  • Pour 1 cup water into small saucepan. Add mints. Bring to boil; cook until mints are completely dissolved, stirring constantly. Add to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Stir in remaining 3/4 cup water. Remove 1 cup of the gelatin; set aside at room temperature. Refrigerate remaining gelatin 45 min. or until slightly thickened (consistency of unbeaten egg whites).
  • Add 1/2 cup COOL WHIP to slightly thickened gelatin; stir with whisk until well blended. Pour into 4 parfait or dessert glasses. Refrigerate 20 min. or until gelatin is set but not firm (gelatin should stick to finger when touched and should mound). Pour reserved gelatin evenly over creamy layers.
  • Refrigerate 3 hours or until firm. Top with the remaining COOL WHIP just before serving.

Special Extra

Crush a few additional starlight mints. Sprinkle over parfaits just before serving.

    Oh my goodness, these are soooo good. I made these to try out and was surprised at how easy and delicious they were. These will definitely be on my baking menu for Christmas treats for every Christmas from here on out. YUM!

    This recipe has a uniquely wonderful taste and texture. I first made it several years ago in a jell-o promotional candy cane mold. All of the guests loved it. My young nieces and nephews couldn't get enough. It is reminiscent of the jell-o desserts from my childhood, yet it isn't too dated. (such as the cheese and jello combos.. ewww) I strongly recommend adopting this recipe into your family favorites.
