  • Preheat oven to 350°F. Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended.
  • Microwave milk in small microwaveable bowl on HIGH 15 seconds. Add instant coffee; stir until dissolved. Add to batter; mix well. Pour into crust.
  • Bake 40 minutes or until center is almost set. Cool. Refrigerate several hours or overnight. Store leftover cheesecake in refrigerator.

I have been making this for over a year and am now famous for it...people at work and friends and the fire dept are all asking me to make it for the holidays. This and the 3 step pumpkin layer cheesecake I make is all the rave at the holidays. Highly recommend this...but tell everyone you spent hours in the kitchen making it....lol Fantastic recipe!!!

Very easy to make too, but the only thing i would suggest is giving a minimum time as saying 40 minutes or until center is almost set is not good enough. 35 minutes should be the minimum time as 40 minutes is too long (at least in my view) and caused the cheesecake to crack.

I wanted to get a coffee that would be drank since we don't use instant normally. It was a delicious cheesecake, and tasted just like the coffee. Plus, it was super easy to make. Next time I make it, I think I will try with another coffee flavor.

Rated 5 out of 5 by from I made ths for my mom for Mother's Day. I made ths for my mom for Mother's Day. She just called to tell me that it is phenonmenal!! By far, the best she's ever had! The only thing I did was add the coffee carmel and regal chocolate sauces to the top and sprinkled chopped pecans on top. I'm going over tomorrow, to have a slice myself!!!!!

For me I would put a tad less instant coffee but I am just not a big coffee person. But other friends raved and raved and want the recipe for themselves.
