  • Preheat oven to 350°F. Mix crumbs and butter; press firmly onto bottom of 8- or 9-inch baking pan. Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Pour over crust.
  • Bake 40 minutes or until center is almost set. Cool.
  • Refrigerate 3 hours or overnight. Cut into 16 bars. Store leftover bars in refrigerator.

How to Easily Remove Bars from Pan

Line pan with foil before pressing crumb mixture onto bottom of pan.


Omit crumbs and butter. Prepare batter as directed; pour into 1 ready-to-use graham cracker crumb crust (6 oz.). Bake and cool as directed.

    I've seen other recipes that asked for sour *****, flour, milk or other extras in the batter. I think they'd really help here. It's basic and tasty but not great if you're looking for that rich, cheesecake flavor. I wouldn't make this again unless I needed something cheesecake-ish and quick. _Oh, and I ended up adding 4-5 more Tbsp. of butter to the crust to get it to stick. Not healthy! And I would have baked it beforehand to get it to set. When I cut and served my bars, it was extremely crumbly. Not crumbly in a good way.

    could be a little sweeter, same with the graham crackers. But otherwise nice and smooth.

    Excellent! I followed reccomondation of using strawberries as a topping and I also drizzled some chocolate syrup on top. It looked great and WAS great!!
