  • Heat oven to 350°F.
  • Beat cream cheese, granulated sugar and vanilla in medium bowl with mixer until blended. Add creme de menthe; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended.
  • Pour into crust.
  • Bake 40 min. or until center is almost set. Cool. Refrigerate 3 hours. Sprinkle with decorating crystals just before serving.

How to Make Shamrock Decoration

Use a 2-inch heart-shaped cookie cutter and place it just above the center of the chilled cheesecake. Sprinkle green cake decorating crystals in the cookie cutter. To maintain heart shape, use a light touch when sprinkling crystals. Remove the cookie cutter and place it directly to the right side of the heart you just made, with the bottom points touching. Repeat sprinkling the crystals. Next, make a third and last green heart on the left side of the center heart, again, bottom points touching.

Almond-Cherry Cheesecake

Prepare recipe as directed, substituting 2 Tbsp. almond-flavored liqueur for the creme de menthe, and using a ready-to-use graham cracker crumb crust. Top with 1 can (21 oz.) cherry pie filling just before serving.

I made my own crust with crushed mint Oreos and melted butter and also substituted 1/2 tsp. of mint extract + 2 drops of green food color for the creme de menthe. It was a very minty hit! Even my mom who claims to not be a cheesecake lover thoroughly enjoyed it.

But definitely put the sugar crystals on right before serving. I put mine on earlier and when it came time to serve, they were watery and dyed the cheesecake in very unattractive ways. Still tasted good though.

Rated 3 out of 5 by from I made this recipe with 1/4 tsp. I made this recipe with 1/4 tsp. mint extract and some green food coloring instead of the cream de menthe. It gave it a much better mint flavor. Next time I think I would probably put more mint extract in.

Rated 4 out of 5 by from Huge hit! Huge hit! In my testing, 4 tsp. of creme de menthe is not enough to make the cheesecake 'green'. I suggest using 4 TBS instead. Much greener for St. Patty's!!!
