  • Preheat oven to 350°F. Beat cream cheese, guava paste, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add eggs; mix just until blended.
  • Pour into crust.
  • Bake 40 min. or until center is almost set. Cool. Refrigerate 3 hours or overnight. Store leftover cheesecake in refrigerator.

This is my husbands favorite. Last time I did something different which I liked better. I left the guava paste out until I blended all the ingredients and then I put it in last and mixed a little. The guava paste pieces stayed whole and then once It's baked it kinda melts in the cheesecake. We liked it better and it looked prettier too. I again garnished it with Guava Marmalade and Guava paste pieces. Looking foward to eating it again today!

In my recipe, I melt the Guava paste with a little fresh lemon juice, and blend that into the cream cheese filling. I also add in 1/4 cup Sour Cream. I top it with a half cup of Guava jelly, mixed with two tablespoons heavy cream. I garnish with halved Guava shells.

It is very rich, but very good. For those who can't find the guava paste, check to see if your grocery store has an aisle with Latino or Spanish foods or go to a Latino grocery store.
