  • Beat first 5 ingredients with mixer until blended. Add eggs; mix just until blended.
  • Pour into crust.
  • Bake 40 min. or until center is almost set. Cool. Refrigerate 3 hours. Top with COOL WHIP just before serving.

This is the second time I made this recipe because it was so good and so fast to make the first time. All of the ingredients used in the recipe I all ready had at home and I did not have to run to the supermarket with a list full of odd items to find for this recipe. But the second time I added more lime juice because I like full flavor and i also added a little more sugar. The original recipe is good for people who can not eat a lot of sugar. Be prepared to make extra pies because they are OFF THE CHAIN.

Rated 5 out of 5 by from Made this for my husband to take to his company's St. Made this for my husband to take to his company's St. Patty's Day Party and it was a huge hit! I also made one for us to keep home. I would definitely recommend it seeing as it requires little time and ingredients and tastes amazing! Try it you will be pleasantly surprised it's not an overpowering lime taste very subtle yet unique and refined. I will definitely be making this again and perhaps it will be my little bit of something green just for fun and celebration that I make every St. Patty's Day :)

Great cheesecake...I put a little more lime juice than the recipe says (approx. 2 1/2 tbsp.), and it was not an overwhelming lime taste...just right. I will definitely make this again! The only bad part was that the top part of the filling was a little too golden...it wasn't burnt, but I should have taken it out of the oven a few minutes earlier...just keep an eye on it the last 10 minutes.

Rated 4 out of 5 by from I made miniature cheesecakes with this recipe. I made miniature cheesecakes with this recipe. I added another tablespoon of fresh lime juice because it tasted like a regular cheesecake with only 2 tablespoons. I used 42 miniature muffin paper liners, put a mini vanilla wafer in the bottom of each liner, filled each one almost full, and then cooked at 350 for about 14 minutes. It didn't take long for the cheesecake bites to chill. I topped with whipped cream before serving. Delicious!

Next time, I will make 2 or 3 pies so that we can enjoy more than one piece. Instead of adding lime peel, I added another teaspoon of lime juice for extra tang. Everyone loved it! This is definitely a WINNER in my household.

However in place of one of the cream cheeses I used key lime flavored tofu, which I do not recommend. Next time I will only use the cream cheese, but probably the fat free. This was a very easy cake to make, not many steps at all. Loved it!!!

He likes it so much I have to make them two at a time. If you like more kick just add a little more lime each time until you get the desired taste that appeals to your family.

I just cut the baking time in half. They were a huge hit! Next time I am going to try the mini muffin tin for little cheesecake bites! YUM! Definitely a keeper!
