  • Heat oven to 350°F.
  • Beat cream cheese, sugar and vanilla with mixer until blended. Add eggs; mix just until blended.
  • Place 1 cookie in each of 12 paper-lined muffin cups; top with cream cheese mixture.
  • Bake 20 min. or until centers are almost set. Cool. Refrigerate 3 hours. Peel kiwi; cut into 6 slices, then cut each slice in half. Place 1 kiwi piece on each cheesecake. Top with berries.

Cheesecake Squares

Line 8-inch square pan with foil, with ends of foil extending over sides. Mix 1-1/2 cups finely crushed OREO Cookies or graham crackers with 1/4 cup melted butter; press onto bottom of prepared pan. Prepare cheesecake batter as directed. Pour over crust. Bake and refrigerate as directed. Use foil handles to remove cheesecake from pan before cutting into 16 squares. Top with fruit. Makes 16 servings.

They are great as written, but I've made them a few times and prefer them with these alterations. I add 1 teaspoon of flour to keep the tops from cracking (just for looks). I use Golden Oreo Thins instead of the regular thickness and they are perfect! To make chocolate cheesecakes for my daughter who prefers them, I add 1/4 cup cocoa powder and 1/4 cup more sugar and use chocolate Oreo Thins.

I used the cheesecake base of this one to make mini turtle cheesecakes which were a huge hit with my family. I made the crust with oreo cookie crumbs as they recommended for the cheesecake square version and then put a caramel ice cream topping inside each of the cupcakes before adding the cream cheese mixture. After they had been baked and refridgerated overnight, I topped each cheesecake with pecans, drizzled caramel topping and melted chocolate chips. The caramel topping inside was a major surprize and it worked very well. The kids and adults just loved them! I will definitely make this one again and will try the original fruit version later in the year. Also, I used neufchantel cheese in this recipe without any problems.

Rated 5 out of 5 by from I made these for a party and they were very easy to make. I made these for a party and they were very easy to make. Recipe doesn't say to separate the Oreos, but I seperated the cookie and removed the cream before placing in cup linings. I topped the mini cheesecakes with cool whip and sliced fresh strawberries. The recipe reads to use muffin cup linings but in reality the mix is enough for only 12 regular size cupcakes. They were indeed a great hit.

Rated 5 out of 5 by from These are great! These are great! I topped them with a kiwi slice and a blackberry. I also used the graham cracker crust. My grandmother suggested I fill a pan with a couple of inches of water and place it in the oven while baking the cheesecakes. She claims it keeps the cheesecakes from drying out or over cooking. It must have worked. Mine turned out perfect. I plan to make them again. Next time I'll top them with chopped pecans and drizzle them with Baker's chocolate.

This recipe was SO delicious and easy; I will never make a full-sized cheesecake again! I substituted Oreos with Girl Scout Trefoils and used one brick of 1/3 less fat cream cheese and one regular brick of cream cheese. After baking and cooling we simply topped with sliced strawberries and a little whipped cream. Absolutely the easiest and most elegant dessert I have ever made - YUM YUM YUM!!

I ended up using the Golden Vanilla Oreos. I topped them with some fresh strawberries and tossed it in a little bit of sugar, then crumbled some oreos on top! I had the whole office talking and still talking about how I put my foot in it lol! I will be making this again and again and again!!

I actually used crushed graham crackers and butter and baked it in the paper liners for 5 minutes, let it cool and then added the cheesecake filling. We added strawberry jam to 4 of them, chocolate syrup to 4 of them, and swirled it on top. We left 4 plain. They were a HUGE hit!

Rated 5 out of 5 by from My family and friends love this recipe. My family and friends love this recipe. Whenever I make it, I have to make 2 batches, because it disappears so quickly! I also make it using Splenda for diabetics, and they rave about it! I have also used Oreo cookies for the base, instead of vanilla wafers. This is the best recipe I have ever come across, and it is so easy to prepare!
