  • Heat oven to 350°F.
  • Beat cream cheese, sugar and vanilla in large bowl with mixer until blended. Add eggs; mix just until blended. Stir in 1/2 cup crushed mints.
  • Pour into crust; sprinkle with 1/4 cup of the remaining crushed mints.
  • Bake 40 min. or until center is almost set. Cool. Refrigerate 3 hours or until firm. Top with COOL WHIP and remaining crushed mints just before serving.

Substitute

Prepare using PHILADELPHIA Neufchatel Cheese.

While I'm nearly certain I added a little too much crushed peppermint, this cheesecake was still wonderful for the holidays. It was refreshing and soothing after a big meal, complimented nicely by Extra Creamy Cool Whip topping. If you're looking for something that should be served in small portions (due to the peppermint AND the richness), that is festive, and that will impress, this is a perfect dessert!

Rated 1 out of 5 by from It had way to much peppermint. It had way to much peppermint. Perhaps the starlite mints are to be measured first and then crushed. A bit confusing but that is the only conclusion our family could come to.
