  • Preheat oven to 350°F. Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Remove 1 cup of the batter. Add preserves and food coloring; stir until well blended. Pour into crust; cover with the remaining plain batter.
  • Bake 40 minutes or until center is almost set. Cool.
  • Refrigerate 3 hours or overnight. Top with the whipped topping and strawberries just before serving. Store leftover cheesecake in refrigerator.

    I've made this cheescake twice and absolutely love it. Great recipe I like to add sliced strawberries with strawberry glaze on top as an added touch.

    I am eating the cheesecake as I write and it is delicious. Not too sweet, not too cheesy, just right. I agree about putting the plain batter in first because of the thickness but regardless in any matter that it goes it looks intriguing and tastes great. I will definitely make this recipe again!

    I like this cheesecake, but I would think that putting the plain batter in first would be ideal as the strawberry is a bit thinner. The plain batter was so heavy that it wanted to mix with the strawberry. Tastes good though.
