Can be made with fat free or light cream cheese, too. If you really, really drain the cucumber (almost dry), it's like a spread. If you leave it a little moist it's more of a dip. I prefer the dip. Fabulous!

I made it exactly as written (I let the cucumber drain for about 10 minutes), though it did chill longer than 2 hours. I served with pita chips, pretzels and cut veggies. I gave out about 3 copies of the recipe!! Definitely a keeper.

Rated 5 out of 5 by from I had no swiss cheese. I had no swiss cheese. I live fifty miles from town, so I used parmesan. It's delicious. I put the cucumber in the food processer, drained it in a fine strainer. mashing it every couple of minutes while i gathered the rest of the recipe. i used more garlic.

I added extra dill and garlic and yet still seemed very bland. My suggestion is to serve it with crackers, at least then you get the cracker flavor with the cheese.

Made for several parties I've been to over the summer...hardest part about recipe is draining the cucumber, but I wrapped in paper towel and that helped. Also, added a little more garlic. Big, big hit with family & friends.

Rated 4 out of 5 by from This was a very tasty and easy dip. This was a very tasty and easy dip. Nice flavor. We served it with crackers, veggies, and tortilla chip scoops. I didn't have enough time to chill for the time required, and it still turned out just fine.

It is very refreshing, my husband even loved it. I believe I used parmesan cheese instead and that was just as good.
