  • Preheat oven to 350°F. Prepare bread mix as directed on package. Stir in cinnamon, nutmeg and 1 tsp. of the vanilla. Spread batter into greased 13x9-inch baking pan.
  • Mix cream cheese, sugar and remaining 1/2 tsp. vanilla until well blended. Blend in eggs. Pour over batter in pan; cut through batter with knife several times for marble effect.
  • Bake 35 to 40 minutes or until cream cheese mixture is lightly browned. Cool in pan on wire rack. Cut into bars.

Shortcut

To speed-soften 8 oz. cream cheese, microwave on HIGH for 10 to 15 seconds.

Special Extra

For easy cleanup, line baking pan with foil using this easy method.  Turn pan upside down and fit a piece of foil over top of pan, smoothing corners as needed.  Remove foil.  When you turn the pan over, the foil fits perfectly inside the pan.

I actually found carrot bread mix for this recipe (only available during the holidays, apparently). Added extra 1/2 tsp. nutmeg, 2 HEAPING teaspoons of cinnamon, and maybe a smidge extra vanilla. I would highly recommend adding some orange peel to the cream cheese mixture, maybe a teaspoon or so. I think it really enhanced the flavor. These were very tasty. Got rave reviews at the potluck.

Rated 3 out of 5 by from As many others have said, I could not find carrot bread so I used pumpkin bread mix. As many others have said, I could not find carrot bread so I used pumpkin bread mix. It was just so-so. It was moist enough and I could see how it would taste good if there were more spices, but it was kind of bordering on being a little bland. I'd definitely recommend adding some more spices (and I usually like things on the blander side, so that's saying a lot coming from me).

The only thing I changed was the stores in my area don't carry the quick bread carrot cake version so I made it with Pumpkin quick bread mix. It had a creamy texture almost like cheescake. Melt in your mouth and a little light spicy flavor delicious.

Rated 5 out of 5 by from Made this in the summer and couldn't find carrot bread mix. Made this in the summer and couldn't find carrot bread mix. Used apple cinnamon mix and it turned out wonderfully. Super moist, but stayed together. Took bars to a cookout, travelled with no problems. Will try in the fall with pumpkin bread mix.

Rated 5 out of 5 by from Tastes great! Tastes great! I substituted the carrot bread mix with a pumpkin bread mix from Pillsbury. Also I used fat-free cream cheese to make this recipe. Followed everything else to a tee and the bars were greatly received, TWICE! Definitely a keeper.
