  • Mix graham crumbs, margarine and 1/4 cup sugar; press onto bottom of 13x9-inch pan. Refrigerate until ready to use.
  • Beat Neufchatel and remaining sugar with mixer until blended. Add dry gelatin mix; mix well. Stir in peaches and COOL WHIP. Pour over crust.
  • Refrigerate 4 hours or until firm.

    Made this recipe several times since I found it on this webside it's so versatile. Instead of fresh peaches, cuz couldn't find dissent ones at the market, I used canned peaches drained in the 15oz & 8oz size, cuz I like a lot of fruit in my cake, but I've also used canned pineapple chunks drained, but you can really use a lot of different kinds of fruit. I also added cut up chunks of pound cake, for add'l texture, I've used chunks of pound cake inlieu of the graham cracker crust. Truly a winner recipe.

    This was awesome. I didn't read ingredients correctly so I only put 1 - 8oz box of cream cheese, 1/2 the sugar and I used special k cereal for the crust. It turned out very light and fluffy with a crispy crust. It was a big hit at the office.
