  • Mix graham crumbs, margarine and 1/4 cup sugar; press onto bottom of 13x9-inch pan. Refrigerate while preparing filling.
  • Beat Neufchatel and 3/4 cup of the remaining sugar in large bowl with mixer until blended. Add preserves; mix well.
  • Mash strawberries with remaining sugar until blended. Add to Neufchatel mixture along with the COOL WHIP; stir just until blended. Spread over crust.
  • Refrigerate 4 hours or until firm.

Rated 4 out of 5 by from I used regular cream cheese and it turned out great, it did firm up. I used regular cream cheese and it turned out great, it did firm up. Maybe the other rating didn't firm up because there was too much juice in the strawberry/sugar mixture? I didn't add the juices from the mixture, just the berries. The peach flavor idea is a great one. I think I will try that too. Also, I don't think this recipe was intended to be "healthy", just a bit healthier than a typical cheese cake.

Rated 5 out of 5 by from I made this for a smaller crowd and halved the recipe and made it in a pie pan. I made this for a smaller crowd and halved the recipe and made it in a pie pan. The graham cracker crust they tell you to make did not work in the pie pan. Next time I would just buy a pre-made graham cracker crust. I used all low fat ingredients and it tasted really good! I cut up fresh strawberries and put them on top of each piece of pie before serving - everyone loved it!

Rated 5 out of 5 by from We didn't have any graham crackers, but we did have a box of 12-count Poptarts! We didn't have any graham crackers, but we did have a box of 12-count Poptarts! Since our family always rips off the crust anyway, I thought using the crumbled crusts would be a tasty substitute, and it turned out that a box of 12 Poptarts provides EXACTLY 2 cups of crumbs! It gave the cheesecake a deliciously sweet crust to work your way into- YUM!

I made it for Fathers Day and everyone raved and wanted more. I sent leftovers to the neighbors and they loved it and wanted the recipe. Apparently they shared it with another neighbor who stopped me and told me it was the best thing he ever had. It is Great gotta try it.

I followed all instructions carefully, placed it in the refrigerator for 2 nights,then took it to work for a party. It was like soft pudding - it did not firm up. Maybe it was using the Neufchatel cheese instead of regular cream cheese. I don't think I will make it again.

I made it for a party and it didn't end up getting put out on the table b/c there were other desserts, but I'm happy b/c I would've been embarrassed. It didn't taste like strawberry at all, it was like taking a bite out of a bar of cream chesse and the crust was soggy. YUCK!!!

We thought it tasted a lot like yogurt which I normally like. I make Kraft recipes all the time and very rarely do I come across one that I wouldn't make again but this happens to be one.

I froze for about 4 that did not help it, then overnight still didn't help. Is there anything I can use to help it to firm? I did use fresh strawberries...could that be it? I would make again as long as I know what went wrong.
