  • Stir boiling water into gelatin in small bowl at least 2 minutes until completely dissolved.
  • Beat Neufchatel and vanilla in large bowl with electric mixer on low speed until well blended. Gradually add gelatin, beating until well blended. Gently stir in whipped topping and strawberries.
  • Spoon evenly into 8 custard cups or dessert dishes. Refrigerate at least 1 hour or until firm.

    This was so easy to make and so delicious! I used raspberry sugar-free Jell-o rather than strawberry, and I think this just made it taste better. For as simple and light as it is, this mousse is excellent.

    Thanks to the Southbeach Plan I have lost 42 pounds. I have additional 25 pounds to lose; My biggest challenge has been finding good low cal desserts; this recipe was right on the mark; I tried it first as indicated than I experimented with other flavors such as lemon...FANTASTIC!!!
