  • Stir boiling water into gelatin in small bowl at least 2 minutes until completely dissolved.
  • Beat Neufchatel and vanilla in large bowl with electric mixer on low speed until well blended. Gradually add gelatin, beating until well blended. Gently stir in whipped topping and strawberries.
  • Spoon evenly into 8 custard cups or dessert dishes. Refrigerate at least 1 hour or until firm.

My kids and I taste-tested it before we went and realized I needed to make a second batch to take. It was the hit of the party and everyone was surprised and thrilled how easy it was to make!

Rated 3 out of 5 by from This was a good easy dessert. This was a good easy dessert. I used regular cream cheese so it's probably why it was very rich. It's not my favorite strawberry dessert but it is good. Either make the dessert cups small or put it in a pirex.

I used regular cream cheese, not low fat and one 8oz fat free cool whip and one 8oz regular cool whip, and also addes more fresh crushed strawberries, approx. 1 cup. It was delicious!
