  • Heat oven to 350ºF.
  • Clean mushrooms. Remove and discard stems.
  • Mix cream cheese, Italian dressing mix, mayonnaise, onion and Parmesan cheese; set aside.
  • Put stuffing mix in separate bowl.
  • Stuff mushrooms with the cream cheese mixture.
  • Press cream cheese side of mushrooms into the stuffing mix until well coated.
  • Place mushrooms, cream cheese sides up, on a baking pan, then drizzle with the melted butter.
  • Bake for 30 min. Sprinkle with parsley and red pepper. Enjoy!

    The filling is a good basic recipe that can be expanded upon. I used aged asiago cheese & imitation crab meat that I wanted to use up, fresh tomatoes, red onions and Ritz instead of bread crumbs. Next time I will try different veggies, canned salmon, etc. Also I plan to add some parmesan cheese to the Ritz, & put the mushrooms under the broiler for added crunch to the crackers. Plus, instead of the dry Italian dressing, I may try dry ranch dressing. Yummy!

    In my test run, I found the Italin dressing seasoning to be too strong. When I prepared this for guests, I modifid the recipe by using Ranch dip instead of the mayo and Italian dressing. I also used Panko bread crumbs instead of stuffing. This was a bg hit!
