For best results, use small or medium eggs to prepare this Pickled Egg Recipe. Also, it is best to pickle the eggs soon after cooking them. This will allow the eggs to better absorb the pickling liquid.
Prepare recipe as directed, adding layers of 5 to 10 peeled garlic cloves in the jar along with the eggs and onions before adding the vinegar mixture.
Add 1 or 2 small chopped boiled fresh or canned beets to the jar along with the eggs and onions.
Place the jar, right side up, on rack in boiling-water canner. Add enough hot (not boiling) water to jar to cover rim of jar by at least 1 inch. Boil 10 min. Carefully remove the hot sterilized jar from water, then drain. (Note: For altitudes higher than 1,000 feet, boil jar 1 additional minute for each additional 1,000 feet of elevation.
