  • Spoon cookie crumbs into 12 paper-lined muffin cups.
  • Beat cream cheese spread and sugar in large bowl with whisk until blended. Add pineapple and 3/4 cup coconut; mix well. Gently stir in COOL WHIP. Spoon into prepared cups; top with remaining coconut.
  • Freeze 4 hours or until firm. Let stand at room temperature 10 min. before serving to soften slightly.

How to Toast Coconut

Toasting coconut is easy. Just spread BAKER'S ANGEL FLAKE Coconut evenly in shallow baking pan. Bake at 350°F for 7 to 10 min. or until lightly browned, stirring frequently. Or, spread in microwaveable pie plate. Microwave on HIGH 3 min. or until lightly browned, stirring every minute. Watch carefully as coconut can easily burn!

Rated 4 out of 5 by from The taste was great, the only thing I didn't like were the oreos. The taste was great, the only thing I didn't like were the oreos. I love oreos, and so did everyone that tried these; but they're more like crumbs with this recipe, and the cream cheese mixture doesn't adhere to them after thawing - makes these difficult to eat. I didn't have a regular size muffin pan, so I used a mini and I think that next time I will try putting a mini-oreo in the bottom, instead of crushing them.

Next time, I will add chopped maraschino cherries and maybe some coconut rum for a little kick!! I bet you could also make this in a bar pan and freeze and serve as squares as squares, Easy and delicious, thanks

I did modify the receipe just a little. Instead of the Oreo's, I crushed up coconut cookies & mixed them with a little melted butter. Delicious!
