  • Mix pineapple with juice and marshmallows in large saucepan; cook on low heat until marshmallows are completely melted, stirring constantly. Remove from heat; cool slightly.
  • Pour into pastry shell; refrigerate several hours or until chilled.
  • Spread whipped topping over pineapple filling just before serving; sprinkle with coconut. Store leftover pie in refrigeartor.

    My family LOVES this! It has become an Easter dinner traditional dessert AND a big hit for casual summer dinners too. It adds a tropical feel!

    This was a great recipe. The family loved it. Was too sweet, just right for those who want a light tasty dessert. I plan to make this again. I used a graham cracker pie crust (ready made). One thing I didn't do was lightly toast the coconut flakes. It still tasted great!
