  • Heat grill to medium-high heat.
  • Thread half each of the shrimp, pineapple and vegetables alternately on 2 parallel skewers. Repeat with remaining ingredients and additional skewers to form 2 kabobs.
  • Grill 4 to 6 min. or until shrimp turn pink, turning and brushing occasionally with barbecue sauce.

Substitute

Substitute boneless skinless chicken breasts, cut into 1-inch pieces, for the shrimp.

Note

If using metal skewers, use just 1 skewer for each kabob.

I've made kabobs for years, and some of the ingredients whirl around the skewer while trying to turn them over. The most clever part of this recipe is using two skewers! Now why didn't I think of that? And I'm surprised no one mentioned it in the other reviews.

The combination of all was an easy, light, super summer dinner enjoyed on our deck. Thank you for quick, flavorful, fresh recipes.

I haven't tried this yet but I do know that when cooking onions with kabobs it's a good idea to parboil them so that they are not still raw when everything else is cooked. I am looking forward to trying this recipe. It sounds good!!

The shrimp I had at home were smaller so I put them in an aluminum pan with all the ingredients and then put them on the grill. Putting them in a pan you have all the juices from the barbeque sauce and pineapple. Delicious.

We ran out of skewers but ended up putting the rest in a grill skillet lined with foil. I think they almost tasted better this way as they cooked more in the bbq sauce. Either way, DELICIOUS.
