This is an excellent cake. However, since cool whip doesn't hold up for a long period of time, I substituted a CREAM CHEESE frosting for the center of it. It was great!!

What You Need

pkg. (2-layer size) yellow cake mix

eggs

cup BREAKSTONE'S or KNUDSEN Sour Cream

1/4

cup oil

1/4

cup butter, melted

1/3

cup packed brown sugar

can (20 oz.) pineapple rings in juice, drained, juice reserved

maraschino cherries, halved

cup BAKER'S ANGEL FLAKE Coconut, toasted, divided

1/2

cup thawed COOL WHIP Whipped Topping

Make It

HEAT oven to 350°F.

BEAT cake mix, eggs, sour cream, oil and 1/2 cup reserved juice in large bowl with mixer until blended.

POUR butter into 1 (9-inch) round pan; sprinkle with sugar. Arrange pineapple and cherries over sugar; sprinkle with 1/2 cup coconut. Cover with half the cake batter. Cover bottom of second 9-inch pan with parchment paper; spray with cooking spray. Fill with remaining cake batter.

BAKE 45 min. or until toothpick inserted in centers comes out clean. Immediately invert cakes onto wire racks; cool completely.

PLACE plain cake on cake stand or platter; spread with COOL WHIP. Sprinkle with remaining coconut. Top with second cake layer, pineapple-side up.

How to Prepare Cake in 13x9-inch Pan

Heat oven to 350°F. Prepare batter as directed. Pour melted butter into 13x9-inch pan; sprinkle with sugar. Arrange pineapple and cherries over sugar; sprinkle with coconut. Cover with batter. Bake 35 to 40 min. or until toothpick inserted in center comes out clean. Immediately invert on platter or tray.

sorry to say i was dissapointed with this cake recipe , the cake broke apart into pieces both the layers i followed the recipe to the T . I have baked many cakes and followed many baking recipes but this one didnt turn out well. I couldnt present it at the small gathering i was taking it too.

Made this cake for father's day for my boyfriends stepdad. They loved it! I omitted the coconut but followed the rest of the recipe. The cool whip was a great touch.

Nunca antes habia hecho un pastel y cuando decidí hacer este nunca pensé que me fuera a quedar tan bien, es una receta muy fácil y sencilla pero no por eso deja de ser delicioso.
