Pineapple Upside-Down Cupcakes

Fancy frosted cupcakes, be warned. The contender is back. Sweet fruit bakes on the bottom of lemon cake for a new mini-take on a classic crowd-pleaser.

What You Need

1/2

cup packed brown sugar

1/4

cup butter, melted

cans (8 oz. each) pineapple tidbits in juice, drained

1/2

cup chopped PLANTERS Pecans

maraschino cherries, halved

cup boiling water

pkg. (3 oz.) JELL-O Lemon Flavor Gelatin

pkg. (2-layer size) yellow cake mix

eggs

cup oil

tsp. lemon zest

Make It

HEAT oven to 350ºF.

MIX sugar and butter in medium bowl; stir in pineapple and nuts. Place cherry half, cut-side up, in center of each of 24 paper-lined muffin cups. Cover with pineapple mixture.

ADD boiling water to gelatin mix; stir 2 min. until completely dissolved. Cool 10 min.

BEAT remaining ingredients in large bowl with mixer until well blended. Add gelatin; mix well. Spoon over pineapple mixture in muffin cups. (Cups will almost be completely filled.)

BAKE 15 to 18 min. or until toothpick inserted in centers comes out clean. Cool in pans 10 min.; remove from pans to wire racks. Cool completely. Invert onto plates just before serving; remove paper liners.

This recipe is extremely easy & Delicious. I use the same recipe to make a 8inch round cake. Everyone i make them for has enjoyed them. Making them this weekend for my sister's house.

While they are a bit messy/sticky, they are truly tasty. Next time though, I will use a little less batter for each to give it a better fruit to cake ratio.

I didn't have lemon jello.. So I used a Lemon cake minus the Jello part. It worked fabulous. I did grind my nuts up real fine. Some people get too picky about the nuts! Loved the recipe.. So easy..

Just be sure you put enough pineapple mixture in the bottom.These were wonderful and we will make again.

I wish I would have scaled back the recipe because I am up to my ears in cupcakes, but they are really good. Turned out just like the picture. These need to be eaten with a fork, too sloppy to eat out of hand. A dollop of whipped cream would be awesome too. Anyone know if they freeze well????

Love this recipe. Was a great hit. Made it a second time used pineapple flavor cake mix and pineapple flavor geltin. Everyone loved it. So many different flavors can be used.
