What You Need

Tbsp. brown sugar

can (8 oz.) pineapple chunks, drained

pkg. (8 oz.) frozen BOCA Veggie Breakfast Links, chopped

pkg. (8-1/2 oz.) corn muffin mix

1/4

cup cholesterol-free egg product

Make It

HEAT oven to 400ºF.

SPRAY 8-inch square baking dish with cooking spray; sprinkle with sugar. Top with pineapple and chopped links.

PREPARE muffin batter as directed on package, substituting egg product for the egg. Pour over ingredients in dish.

BAKE 25 to 30 min. or until golden brown. Run knife around edge of dish to loosen casserole; invert onto platter.

My family like this even thou I brunt the top a little, if they like it brunt crust in all you know I would love it.

I made this with leftover breakfast sausage (crumbled) but next time I will make it with crushed pineapple like the other reviews. The big pieces of pineapple took away from the overall blend.

I loved this recipe. I used real maple sausage but kept everything else the same. I did have some say they did not like it because it was sweet and savory. I love that combination!!

I made this recipe christmas morning for my family. It was very quick & easy! I did change it up a bit however... I used the egg in the corn bread mix, crushed & chunk pineapple and I used real brown and serve pork sausage that I browned in a pan first and drained the fat. It was a nice combo of sweet & salty which my family likes so needless to say it went fast.

Excellenty sweet, salty combination. I made it for Easter brunch and got thumbs up all the way around - even from people who usually don't like sausage or corn bread!

My fam thought it good. Next time I might try crushed pineapple for the extra juice and 2 boxes of corn bread. (we like bread!) Crumbled sausage probably would work better.

I made this recipe with pineapple slices instead of tidbits and crumbled spicy sausage instead of sausage links. It was a big hit! I thought it was a perfect treat, a little bit salty and sweet.

This recipie was so dry and had no taste what so ever. You had to drench it in syrup so it would be edible. If you do make the recipie, maybe chopped pineapple would be better.
