Had turkey meat on the Mayo ones, and chicken on the Ranch ones. And Romain lettuce as the lettuce. Had Ranch in the middle of the platter for dipping, and wound up re-filling it cause everyone loved the taste of them dipped. They said it was very different, filling, and they would like it again... I don't even like tortilla shells, and I liked them too. Quick, and easy, will go good for my son's lunch another time...

The only thing is that it was very difficult to make at the beginning for a first timer....The mustard and mayonnaise kept squeezing out, and I didn't know how much meat to put in it. I couldn't even roll it up the first time because I probably put the lettuce in the wrong direction...it'd be great if the recipe can spell out more on how to arrange all the ingredients inside.

The only thing I changed was I used shaved turkey & roast beef from the grocery deli & I shaved block cheddar cheese on it instead of using the pre sliced. The Carrot Pinwheels are also very good.

I made these for a party recently and everyone was very impressed and of course they were a big hit. I mixed the mayo and mustard together then spread it on. I used pepperjack cheese for a little spice. The possibilities are endless.

I think I might try ranch next time instead of mayo for a different taste. Also, carrots and ranch go great as side items.
