Pistachio Bar Dessert

What You Need

OREO Cookies, finely crushed (about 3 cups)

Tbsp. butter or margarine, melted

pkg. (3.4 oz. each) JELL-O Pistachio Flavor Instant Pudding

cups cold milk

tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

cup toffee bits

Make It

MIX cookie crumbs and butter until blended; press onto bottom of 13x9-inch pan. Refrigerate until ready to use.

BEAT pudding mixes and milk in large bowl with whisk 2 min.; spread 1-1/2 cups onto crust. Stir half the COOL WHIP into remaining pudding; spread over pudding layer in pan. Cover with remaining COOL WHIP.

REFRIGERATE 4 hours or until firm. Sprinkle with toffee bits just before serving.

This is a delicious, pretty and easy recipe. I used packaged whole roasted pistacios on top. We made it for a club meeting and everyone loved it. I may try it with different flavors or colors.

I have made this for many family get-togethers and also for potlucks at work. It is very simple and quick to make. I get Rave reviews each time I serve this. You can of course use different pudding flavors also.

Very easy and delicious!! I used to make "pistachio fluff" for family functions, but this was a great way to change it up.

My family LOVES this dessert, and it is so easy that even my husband has made it without a problem! I do add an extra box of pudding, an extra cup of milk, and I used a large tub of Cool Whip instead of the smaller. That helps give the bars a little more substance. We have also substituted the toffee bits with mini chocolate chips or more crushed cookie. It doesn't matter what you do to it - everyone loves this dessert!

I absolutely LOVE this dessert! I made it around St. Pat's Day for family and they loved it. I just made it again for just us and between me and 2 of my boys, it was gone quickly! I'm getting ready to take it to a church dinner too. It's so light and refreshing! I do use more cool whip on top b/c there just isn't enough to spread with what the recipe calls for.
