This is a great basic pasta salad recipe and fun to tweak to your families preferences...or what's on hand in the pantry or garden. Try experimenting with different types of pasta..my family loves mini cheese ravioli as an option. Same goes for the cheese..we love fresh mozzarella in bite size pieces, but fresh parmesan or romano adds another dimension of flavor; and no one says you can have only one kind of cheese. Almost always add a little red onion and lots of garden fresh basil is a must.

I made it for a work potluck (at a department store), and shared some with a Bride that was getting her makeup done that was hungry. She told me she would have served it at her wedding! I was told by coworkers that it was "like heaven on earth". I used one 28oz. can of petite diced tomotoes, 8oz. shredded block mozzarella cheese, 1T dried basil, and 1 8oz bottle of Kraft Zesty Italian dressing and pepperoni with the entire 1lb box of penne pasta. If you make this recipe you will be a star at any potluck.

Rated 4 out of 5 by from Yum! Yum! I didn't have tomatoes so I used julienned multi-color mini sweet peppers. Tasted good, but I think I'll add the tomatoes back in next time. I did realize that, since this has no eggs/dairy/mayonaise, it would be GREAT for picnics, tailgating, reunions, church potlucks, or anywhere that it may sit out for a while!

I really like this recipe! it's great for the summer, Idon't have central air so I cook the pasta up in the morning and mix it with the dressing then when I get home from work I throw the rest of the ingredients in and serve with some crusty multigrain bread. I also like to put extra veggies in like zucchini mushrooms and roasted red peppers, feta and olives are always good too. This is a recipe you can change up like changing up the types of pizza.
